Q&A with our Head Chef
How did you get started in the industry and what made you want to work with food?
For me it all started at the age of 16 when my family moved down to Cornwall. I started working in local café’s for seasonal work, and really got a feel for the food industry. Then at the age of 17 I started as a waiter in ‘The Talland Bay Hotel’, I started helping out in the kitchen and getting a feel for what it would be like to be a chef.
Where were you trained?
I started my apprenticeship at ‘The Talland Bay Hotel’ and ended up being fully trained by a classic French Chef. It was at this point that I became really passionate about food, before that point I was happy with just cheese on toast! It was a French ran kitchen, they would put other French chefs up in the hotel and from them I picked up their methods, and that inspired my own cooking. All the chefs were very passionate about their specialities, and I guess that rubbed off on me.
